A Super Simple 4-Ingredient Recipe

Don’t you just love Costco? I’m not sure I could ever live in a city without one.
They’re always surprising me with new products that blow me away—both because of their taste, but also their quality.
Last week, I stumbled upon this Kiolbassa hickory smoked sausage that is organic and 100% grass-fed.
So, on Saturday night, we fired up the grill and threw those puppies on.
Inside, I roasted a couple of potatoes and sautéed some peppers and onions I already had in the fridge. When the sausage was done, I sliced it up and threw everything together in a large bowl.
You guys, this was one of the best meals we’ve had in a long time!
This meal called for only FOUR ingredients (unless you count the seasonings hehe)—talk about simple.

Ingredients
Serves 4
Kiolbassa sausage—4 links
Two bell peppers, any color
One large onion
5-6 medium potatoes (I used russet, but any potatoes would work!)
Directions
Grill the sausage on both sides until done to your likeness
If you don’t want to grill, slice them up and sauté on the stove
Chop potatoes into chunks, toss in avocado oil, and sprinkle with salt, pepper, rosemary, thyme, and paprika (season with your heart)
Slice bell peppers and onions into strips similar in width
Heat avocado oil in a large pan and sauté peppers and onions until beginning to blacken (you could also just roast these veggies in the oven with the potatoes)
When the sausage is done, slice them and toss them in a large bowl with your veggies

This is similar to something I already make. I love to sauté sliced potatoes, red peppers and onions in avocado oil, with a bit of salt and pepper and minced garlic. Sometimes I'll add sliced zucchini. It's a delicious side that's almost as filling as an entree. That sausage does sound good, too. Blessings to you and yours!
